Roland Trettl is known by gourmets since his latest role as chef in the restaurant Ikarus in the legendary Hangart7 in Salzburg. There he holds togheter, what isn't really together. Namely, a restaurant, which every 4 weeks changes completely, and where every month another talented cooking swing his spoons.Trettl finds the star-chefs around the world. He travels from Canada in the Far East, to South Africa and in the far north. Trettl meets chefs, learns their special cuisine and engage them for a month in the concept-restaurant Ikarus. The fact that the kitchen is every month so completely different and also the menu changes entirely.
We South Tyroleans are so proud of Roland Trettl because he indeed is a South Tyrolean. In 1971, Roland was born in Bozen and decided to cook quite soon. First cooking experience he gathered in the parental hotel, he was in apprentice in a Hotel in Bozen. After the apprentice he decided to leave South Tyrol and he applied to Eckard Witzigmann, the world's known cooking guru from Germany. Here Roland earned his spurs and layed the foundation for his later professional life.
The next stage of his cooking career brought Trettl to Tokyo, in the Japanese metropolis with completely different customs and habits. This time it was again Witzigmann, who asked him to lead a restaurant in Tokyo. And again it was a complete success. After a few short years, however, was finalised apparently because Trettl had violated against visa proposals. He had to leave Japane.
Cooking-technically speaking, Trettl has achieved everything what cook wants. What should Tokyo finally follow? Hard to believe but true: he wound up in Salzburg, where he became chef in a restaurant with guest-chef concept named Icarus, which was very successfully implemented in last few years.
The Icarus in Hangart7 will probably be again an exciting and unique stage in the life of Roland Trettl. We can be anxious to see what the future brings to the South Tyrolean chef!
