South Tyrolean Speck with porcini mushrooms

Ingredients for 4 people:

  •  200 g / 7 oz sliced Speck Alto Adige PGI,
  • 1 fresh porcini mushroom,
  • 20 g / oz arugula,
  • 40 g / 1.4 oz parmesan cheese shavings,
  • salt and pepper,
  • 4 tbsp extra virgin olive oil,
  • 2 tbsp traditional Modena balsamic vinegar.

Procedure:

Arrange Speck slices on a serving plate. Slice mushroom with a truffle slicer and arrange on top of Speck.

Cover with washed and dried arugula and Parmesan shavings.

Dress with a mixture of salt, pepper, oil and balsamic vinegar.
